Spanish Tomato Bread - Fri 22nd May 2015

Lightly toast thick slices of fresh white bread and rub top surface with halved garlic cloves. Whiz tomatoes very briefly in a, er, whizzer until finely chopped but not pureed. Spoon tomatoes on bread, drizzle with this beautiful oil and serve. This is extremely simple but rather impressive so try it! Good tomatoes of course are key.

3 medium Aubergine

1 tablespoon of tahini

As much garlic as you can stand - I use a lot - fresh cloves are best

Juice of 1-2 lemons

Celtic or some other unrefined salt - enough to suit your own taste

Olive oil, 4-5 teaspoons should be enough

Wash the Aubergine, cut away the stalk and rub with olive oil

Wrap the Aubergine in foil, place in an oven proof dish and roast for about 40 minutes- 1 hour in a hot oven.

Remove the foil and peel away all the skin - this is easy while still hot.

The seeds can be removed and discarded

(If I don't remove the seeds, I add a heaped teaspoon of Xylitol or sugar to the blending jug - this takes away any bitterness)

Chop the Aubergine roughly and add all ingredients to a blender.

Blend until smooth and creamy.

This can be served immediately or jarred and served later.

If jarred, it will keep for a couple of days in the fridge.

I wish someone would design a better pouring system for these oil bottles as they can be so messy to use each time. You need to do a quick forward and backward motion to be safe but not good when precise measuring is required.

We use this oil daily and love the taste. Have used for roasting veg and even potatoes and it keeps its flavour and does not deteriorate at high temperatures.

I used to use Biona but changed to this when the price went up as I go through bottles so quickly. Lovely flavour - tastes the same as the Biona to me to be honest. I have a bowl and dip my food into it and it adds an amazing flavour. But the one thing I hate is I find the new bottles very hard to pour without the oil dribbling down the side when I finish. I probably waste a lot doing this and it really irritates me as the older slimmer bottles did not cause this problem.

This is a very nice oil, I use this for making hummus, baba ganoush, pesto and anything where I don't want to heat the oil. Great in salad dressing too.

This is the very best and tastiest Organic extra virgin olive oil. I use 1-2 tablespoons every day drizzled over vegetables and most cooked foods like grilled salmon, eggs, pasta etc. Great in salad dressings, this is one of the world's healthiest foods :-)

Extra virgin olive oil is very good for your blood but personally makes me chubby! I normally use no-more than 1 teaspoon in soups to add additional flavour but goes well with countless foods. You can even use it to shallow fry with instead of unhealthy fats and it makes fantastic eggs.

I have read that the best olive oil comes from the initial cold presses and the easiest way to test for quality is to put it in the fridge; it should become cloudy with some solidification - the more so the better. With this one there was about 20-25% solidification, (a similarly priced type bought elsewhere just became slightly cloudy). The taste is very mellow with no bitterness and really beyond comparison - have thrown the other away.
