Serving Suggestion

As Stock: 4tsp per litre
As Seasoning: sprinkle lightly to enhance flavour of all savoury dishes
As Hot Drink: 1tsp per cup of boiled water for a delightful beverage with only 10 calories

Spicy Mushroom Soup - Sat 25th Jan 2014

1 pack of mushrooms, peeled and diced.
1 medium onion, roughly chopped.
2 carrots, roughly chopped.
1 heaped teaspoon of bouillon powder.
Salt to taste.
1 200 g tin of coconut milk.
1 heaped tablespoon of curry powder, use the type you like the most.
Olive oil.
2 - 3 cloves of garlic.
Fry the carrots, onion and garlic in olive oil, until beginning to soften.
Place all ingredients, except the mushrooms in a blender, adding enough water to make a thin soup and blend until smooth.
Transfer to a large pot and bring to the boil, then reduce to a simmer.
Fry the mushrooms until nearly cooked, add to the soup and cook for about 45 minutes before serving.

This is great for adding flavour to homemade soup and stews. I even add a bit to quinoa, cous cous and rice for extra flavour

This is a nice stock. I used it with roasted squash to make a soup, it was tasty and very easy to use, would buy this again.

Marigold bouillon is outstanding, a sort of magic ingredient. I've never found anything else that does the job so well - it gives even the most basic soups and vegetable stews a delicious smell and flavour.
