Little Hot Chocolate Mousses

The point of these wonderful mousse puddings is that the centre is still liquid when you serve them, so don't be tempted to cook them for any longer than the stated time. They are delicious served on their own or with ice cream.

5 medium free range eggs plus 5 medium egg yolks
115g Fairtrade caster sugar
225g Divine 70% Dark Chocolate
200g salted butter
75g plain flour
50g Divine Cocoa Powder
Ice cream to serve

8 ramekins, (single portion pudding bowls that can go in the oven) buttered or non stick


Put the eggs, egg yolks and sugar in a large bowl and beat with an electric hand held mixer until the mixture is pale yellow (10-15mins).

Put the chocolate and butter in a heatproof bowl set over a saucepan of steaming, but not boiling, water (do not let the base of the bowl touch the water). Melt gently, stirring frequently, until smooth. Remove the bowl from the heat. Add a small amount of the egg and sugar mixture to the melted chocolate and stir until well mixed. Add the rest of the egg mixture and mix well. Sift the flour and cocoa powder into the bowl and gently fold in with a large metal spoon until just mixed.

Stand the prepared ramekins in a roasting tin and spoon the mixture into the ramekins (the mixture should come to just below the rim).

Bake on the middle shelf of a preheated oven (180oC 350oF Gas mark 4) for 10-12 minutes, until risen and just firm to the touch. Don't cook them any longer than this or they will set inside.

Run a round-bladed knife around the inside of each ramekin to loosen the puddings, then carefully turn them out onto individual plates. Dust with cocoa powder and serve immediately, either on their own or with your favourite ice cream.

Is this clever or what? You mix it all together, stick it in the oven and when it comes out it's got a light crusted sponge on top and a hot sticky chocolate sauce underneath. Quite brilliant.

Preparation time 20 minutes
Cooking time about 40 minutes

Serves 5/6
250 g (8 oz) plain chocolate, broken into pieces
300 ml (1/2 pint) milk
2 tablespoons brandy (optional)
50 g (2 oz) unsalted butter, softened
150 g (5 oz) caster sugar
2 eggs, separated
25 g (1 oz) self-raising flour
25 g (1 oz) cocoa powder, plus extra for dusting
whipped cream, to serve

1 Put the chocolate in a small saucepan with the milk and heat gently until the chocolate has melted. Stir in the brandy, if using.
2 Beat together the butter and sugar in a bowl until pale and fluffy. Gradually beat in the egg yolks, flour, cocoa powder and chocolate mixture.
3 Whisk the egg whites in a separate, grease-free bowl until they hold their shape. Using a large metal spoon, fold a quarter of the egg whites into the chocolate mixture, then fold in the remaining egg whites.
4 Turn the mixture into a 1.5 litre (2 1/2 pint) pie dish and place in a roasting tin. Pour boiling water to a depth of 2.5 cm (1 inch) into the tin. Bake in a preheated oven, 180C (350F), Gas Mark 4, for about 35 minutes until a crust has formed.
5 Dust generously with cocoa powder and serve hot with whipped cream.

Hazelnut Chocolate Spread - Tue 26th Jun 2012

Toast 300 g blanched hazelnuts on a baking sheet in a preheated oven at 160 degrees C for 15 mins. Allow to cool slightly, then whiz in a blender with 50 g icing sugar and 2 tbsp cocoa powder for about 2 mins until a fine powder. With the blender still running, add 2 tbsp vegetable oil and whiz until the mixture is smooth. Combine 2 tbsp skimmed milk powder and 1 tbsp water in a small bowl, then add to the hazelnut mixture. Continue to whiz for 3 minutes until well combined. Excellent spread on toasted hot cross buns and topped with sliced pears.

Cocoa Balls - Sun 13th Nov 2011

Mix 250 g crushed biscuits, 4 tbsp cocoa and a 400 g can of condensed milk together to make a very sticky mass(!) Roll generous teaspoons of the mixture into balls and cover in dessicated coconut. Chill before serving. (Balls can also be frozen.)

Great quality cocoa powder. My wife makes a delicious devil's food cake with this and it is great for making hot chocolate. I know Divine also sells hot chocolate drink mix but this saves having two tubs taking space in my cupboards.

Cheaper and better than any I have been able to find in the supermarkets. Ideal for the low carb dieter. Sounds strange but I make fairy cakes out of canallini beans and use this product to turn them into chocolate cakes. With the recipe I have obtained over the internet, you can produce muffin size chocolate cakes with only 6.5 net carbs! If you leave the cooked cakes for 24 hour to stand, you would not know they were made from beans. Also work out 177 cals compared to 330 at the supermarket. Just google healthyindulgences for a great recipe.

The difference between cocoa powder (this) and cacao powder is that cocoa is roasted while cacao can't be heated above 40 degrees and is classed as being raw. Divine Fairtrade Cocoa has a tasty dark flavour that just needs sweetening in some way but could be left unmilked.
