Traditional Homemade Ginger Beer

To start the ginger beer 'plant' :
mix 1/2 oz fresh yeast,
2 tea sp ground ginger,
2 tea sp sugar with
3/4 pint of water.
Leave for 24 hours, then feed daily with 1tea spoon of ground ginger and 1 tea spoon of sugar.
After 7 days strain the 'plant' through a muslin of fine cloth.
Dissolve 1 1/2 lb sugar in 2 pints of hot water.
Add 5 pints of cold water and the juice of 2 lemons.
Mix this with the liquid from the plant.
Put into corked bottles and leave for a week.
To keep the plant going add 3/4 pint of water to the remaining solid and repeat the process.
The plant should be halved every 2 weeks. If you use screw top bottles have the lids loose.

Preheat oven at 170 degrees centigrade or gas mark 3.

Grease a baking tray.

115 g of vegan margarine.

85 g golden syrup.

85 g soft brown sugar.

225 g flour of your choice.

85 g rolled oats.

2 teaspoons of ground ginger.

Pinch of salt.

1 teaspoon of bicarbonate of soda.

Put the margarine, syrup and sugar into a medium sized pot over a low heat.

In a separate bowl mix the dry ingredients together.

Dissolve the bicarb in a little water and add to the mixture in the pot.

Stir in the dry ingredients until smooth.

Drop small spoonfuls onto the baking tray, leave plenty of space between the mixture as it will spread out during cooking.

Bake for 15-20 minutes.

It's worth the price due to the flavour, less of it is necessary than other brands. Very spicy and if a bit too much used - quite hot. Not very hot but hot enough to give an edge to dishes.

Gorgeous, fiery flavour! You don't need as much of this ginger, as its so intense. Gives a lovely kick to loads of desserts, especially fruit ones - it cuts through the sweetness beautifully.

Good quality, great price. Very hot, I now use half the amount in recipes than I would the ginger you buy in supermarkets. Gives a great kick to banana bread and apple pie.
