Xanthan gum, also known as Xanthum or Zanthan gum is a very useful ingredient to have to hand for ‘free from’ cooking and baking. Xanthan gum is considered by many to be an essential ingredient for any gluten free kitchen. Xanthan gum acts as a gluten substitute in gluten free baking - when added to gluten free bread and cake mixes xanthan gum improves the elasticity of the dough and gives a lighter fluffier texture.

Xanthan gum can also be useful when cooking for low fat diets. The texture of low fat sauces can be improved without increasing the fat content by adding a little xanthan gum.

Even outside of specialist diet cooking and baking xanthan gum is a useful ingredient for improving texture of ice creams, smoothies and preventing separation in vinaigrettes and salad dressings.

A note of caution however! A little goes a long way. When it comes to using Xanthan Gum, be careful to closely follow the recipe and if in doubt use less rather then more.

An exceptionally versatile gluten free and wheat free ingredient. Xanthan gum will improve all gluten free bread and cake recipes. Use in low fat baking and salad dressings as well.

Recipe

Gluten Free Bread:

550ml Warm Water
2tsp Sugar
2tsp Quick Yeast
500g Rice Flour
2tsp Xanthan Gum
1tsp Salt
3tbsp Oil

- Mix in a bowl the warm water, sugar and quick yeast
- In another bowl mix the rice flour, xanthan gum and salt
- Beat in the yeast liquid and stir well
- Mix in the oil and pour it into an oiled 1kg/2lb bread tin
- Smooth the top and leave to rise for 90min
- Cover with tin foil
- Bake in pre heated oven 220°C/200°C/400°F/gas 7 for 50-60min.


Dairy Free White Sauce:

50g Oil
1tsp Xanthan Gum
250ml Rice Milk
Pinch Salt
Pinch Pepper

- Heat oil in a saucepan, sieve in the xanthan gum and whisk well
- Cook gently over a gentle heat, whisking in the milk
- Continue whisking until sauce thickens
- Season with salt and pepper.
