Energy 1450kJ/341kcal, Protein 12.0g, Carbohydrate 74.0g (of which sugars 1.4g), Fat 1.4g (of which saturates 0.2g), Fibre 3.1g, Sodium trace.

Other Information

This traditional type'O' pasta flour has been especially blended for making pasta by hand or in a domestic pasta machine. It is a high protein flour that has been ground from a blend of 'durum' and the common 'aestivum' wheats. It can also be used for pizza and bread making.

Recipe

Fresh pasta

200g pasta flour
2 eggs

Mix the flour and eggs together to form a dough, then knead vigorously for 5 minutes. Place ball of dough in a bowl, cover with a damp cloth and leave for 15 minutes. Roll out on a floured surface until thin, dust with flour, and leave for 10 minutes. Cut sheets into strips of the desired width (eg 10cm for lasagne or 5mm for tagliatelle). Spread out cut pasta on a lightly floured surface and allow to dry for at least 10 minutes before cooking in boiling water for 3 minutes and serving with the sauce of your choice.

I always wanted to make my own pasta so when I finally tried it I'm glad I got pasta flour because it really motivated and reassured me. I used it for cannelloni and regular pasta strips (not as thing as regular spaghetti) which I simply dried on a rack and then cooked fresh rather than dried out to the hard/brittle texture of store bought pasta. It tasted delicious and didn't break before eating, very nice!

Wanted to add that I have tried making raviolis with this and it worked very well. It is important that the dough does not break when making ravioli and this special flour was excellent; we were very impressed with the results. It was my first time making them but it was not difficult.
