Other Information

Gram or channa dahl is a member of the chick pea family which mills into a fine yellow flour which is a rich, natural and glutem free source of protein and dietary fibre.


Onion bhajias:
75g gram flour
2 tsp cumin seeds
1 tsp ground coriander
1 tsp turmeric
½ tsp salt
½ tsp mixed spice
4 tbsp water
100g sliced onion
25g grated potato
5 tbsp oil

Mix together the gram flour and all the spices. Add water to make a smooth batter. Add sliced onions and grated potatoes and mix well. Heat oil in a heavy based frying pan and gently drop in spoonfuls of the mixture. Cook until golden brown on all sides. Remove from oil and drain before serving.

Cauliflower Pakoras - Sun 13th Oct 2013

This is a traditional Hare Krishna recipe and uses Hing, (a garlic substitute) but garlic can be used instead.

1 medium sized Cauliflower (par cooked and cut into florets -steamed is best)
half a cup of Besan flour

1 teaspoon of salt

1 teaspoon of cumin powder

1 tablespoon of coriander powder

pinch of cayenne

pinch of hing (or 1 small garlic clove crushed)

half a teaspoon of turmeric

1 teaspoon garam masala

enough water to make into a medium-thick pancake batter

oil for deep frying (traditionally ghee but for vegans sunflower oil is fine)

Mix dry ingredients with water until smooth, cauliflower must be cold before dipping in batter, coat each floret before dropping gently into hot oil. They will take only a few minutes to cook, remove when golden brown and drain before serving. I serve with salad and a few dipping sauces (chilli and sweet chilli are good).

They are a tasty, quick and easy snack as well as an impressive starter. A great accompaniment to curries.

Mix together:
- 300g gram flour
- 1 teaspoon of lemon juice
- 40g bicarbonate of soda
- 100g of finely chopped onions
- add a mixture of your most enjoyed
- 1 teaspoon of salt
- add enough water to form a batter
Prepare a pan of sunflower oil and heat until hot then place carefully the batter into the oil and fry for a few minutes or until crispped up. Eat straight away.

I love this, very nostalgic; I use it especially for Western/Southern Asian cooking and bread making. A strong, robust, rich flavour and texture that is very hearty and great with spices and oil. Absolutely wonderful when having bread instead of rice too as it soaks up the juice/sauce of the dishes so well.

Good product for gluten free and Asian cooking but also versatile as a thickener for soups or stews. Try it for making a vegan omelette:

Have a vegetable mixture ready, either lightly fried (a little mushroom, pepper, onion, tomato) or leftovers. Mix two heaped teaspoons of gram flour with cold water until the mixture is smooth and just runny, add seasoning to taste. Put vegetables into a small frying pan with a little vegetable oil and turn up heat; pour gram flour mixture over and quickly tilt pan to spread it out. Cook for a couple of minutes then carefully turn the omelette over to brown the other side.

This will break up easily so a small frying pan is essential. For a larger omelette, fry the bottom and grill the top. If grilling, cheese can be added to make a tasty, crispy top.

This is a good quality flour, reasonably priced and great for making a spiced batter for deep or shallow frying of pakora and bhaji. Mixes well and makes a smooth batter really easily without sieving. We like this brand a lot.

Chickpea soup and bhajis! - Wed 23rd Jan 2013

When this disappeared from our supermarket's shelves, I hunted some down here, and ordered it several days ago. I am really happy with the speed of delivery, even in these awful weather conditions!

I can recommend the recipes that are printed on the back of the gram flour packaging, particularly the yellow gram soup, and the bhajis. I also like to add this flour to tofu vegan omlettes, yorkshire puddings (but you must add a dash of lemon juice!) and chapattis.

This flour can be used in both savoury dishes and baking. It is a heavier flour and has a distinctive somewhat nutty taste which some people may need to get used to. It can prove overpowering at times. It is one of a range of flours to broaden your horizons with and has the added benefit of being gluten free. I have made a chocolate cake with this using a recipe I found on the intranet which was devised to meet the dietary requirements of the Jewish Passover.

I have used this product to make pizza bases and shortbread while on a low/slow carb diet Less carbs than other flours but still high. When used in the right way it can be a valuable product.

I love gram flour for its cheery colour, smooth texture and earthy flavour.
Great for macrobiotics and vegans: I have been using it successfully in any recipe that calls for eggs, and also to make veggie burgers or croquettes.

It is so versatile you can use it in sweet and savoury dishes alike and... I even wash my hair with it. Honestly!

If you don't eat eggs for any reason, try making a vegan frittata from chickpea flour batter - you can find recipes on the web. Very savoury and filling, and no cholesterol. Not exactly like an egg omelette but a great alternative for a tasty breakfast or lunch served with a salad.

This flour is very dense and has a bitter flavour. It works fine in savoury gluten free recipes when combined with other flours, but as a standalone I personally didn't find this to work very well with any recipes that I tried. It adds a lot of density to baking and won't rise very well, but does add a nice flavour if combined with buckwheat flour.

I use gram flour to thicken curries and sauces. It has a much nicer flavour than corn flour. I have found nothing tastier to thicken the bechamel sauce in lasagne.
