Spelt flour can be used to replace wheat flour in recipes. It is slightly sweeter and has a more nutty flavour, although it is from the same family as wheat. Spelt flour is not gluten free. Spelt was used by the Romans and has been grown since biblical times.

Recipe

Bluebery and Hazelnut Cake
Serves 10-12
Ready in 1hr 30minutes

Ingredients
200g unsalted butter, softened
200g white spelt flour, sifted
2tsp baking powder
3 large eggs
220g honey
1tsp vanilla extract
finely grated zest of 1 lemon
juice of 1//2 lemon
200g frozen blueberries
unrefined icing sugar, for dusting (optional)
crystallised violets

- Preheat oven to 170°C/350°F/Gas 4, grease and flour a 25cm loose-bottomed cake tin
- In a large mixing bowl, cream the butter until pale and fluffy with an electric hand mixer. Add 2-3 tbsp of flour and add eggs one at a time and beat to give a light fluffy mixture
- Add the remaining flour, baking powder, honey, vanilla extract, lemon zest and juice, folding in gently until everything is well combined.
- Finally add blueberries and stir in quickly before mixture freezes
- Scrape the mixture into the prepared baking tin and level the top with the back of a spoon
- bake in the middle of the oven for approximately 1 hour or until a skewer inserted into the centre of the cake comes out clean
- When baked, remove from oven and leave to cool for 10 minutes before carefully turning cake out onto a wire cooling rack to cool completely.

To finish the cake dust with icing sugar or top with fresh whipped cream, blueberries and crystallised violets

Love this flour, so light and versatile, tastes great and good alternative to wheat - makes lovely bread, cakes and tortilla or flatbreads.

We try to avoid wheat flour in our family as my son gets eczema and I get bloated from it. Spelt flour is just perfect for us. I use wholemeal spelt flour for pancakes, bread and cakes. For muffins I mix the flours - about 2/3 wholemeal and 1/3 white spelt. For burgers and falafels I need to add something sticky to the bean/chickpea mixture so I can deep fry them (tempura style). This white spelt flour is perfect for it. It holds the mixture well and is definitely tastier and easier to digest than white wheat flour. White spelt flour is my all-time favourite in the kitchen cupboard.

This is the best value white spelt flour available. Using spelt in bread making is like using silk instead of cotton. The bread has a light texture, good flavour, rises quickly and does not need much kneading. Also makes good pizza dough, scones, pastry and cakes. Good mixed with rye flour for a heavier loaf and works well with rye sour dough. We like this particular brand a lot.

This flour makes delicious bread and pizza bases. Who needs wheat flour when this is such a delicious substitute and doesn't cause me any stomach problems. Brilliant.

This is really good flour. Although it is glutenous, so makes a good roux, I have found that it doesn't seem to stick to the bottom of the pan as much as ordinary wheat flours do, so is much easier to cook with.

I use this white spelt when baking lighter loaves and cakes where wholegrain is a bit too much. Half of both makes a good combination and has served us well.
