Rice flour has a wide variety of sweet and savoury applications. Rice flour is great for thickening sauces and is traditionally used in short bread.

per 100g:
Energy 1518kJ/357kcal, Protein 6.7g, Carbohydrate 81.3g (of which sugars 1.3g), Fat 2.8g (of which saturates 0.7g), Fibre 1.9g, Sodium trace.

Recipe

Peanut Butter Cookies

125g butter
175g brown sugar
125g peanut butter
1 egg
175g rice flour
1 tsp baking powder

Cream together the butter and sugar. Beat in the peanut butter and egg, followed by the baking powder and rice flour. Evenly space out teaspoonfuls of the mixture onto oiled baking trays and cook for 20 minutes in an oven pre-heated to 180°C / 350°F / gas mark 4.

A Quick Snack: tiny nuggets - Thu 14th Oct 2010

Mix the gram flour with water until the consistency is like a rich pastry dough -smooth, not crumbly.
Add some crushed garlic (as much as you like!) and crushed sea salt.
Use the wee scoops you need for making melon balls in order to shape tiny balls of the dough, and shallow-fry in sesame oil till golden.
Eat warm with salt pickled vegetables, it is filling and very gorgeous, with the texture of a good quality nugget.

This flour is great for adding to gluten-free baking recipes, although it does absorb a lot of moisture. I love using it to make homemade chappatis which also double up as gluten-free tortilla wraps for Mexican meals or as sandwich wraps. Simply add boiling water to some flour and stir with a wooden spoon until it reaches a dough consistency. Wait for it to cool down enough before you handle it manually and simply roll into small balls in your hand, flatten into patties and then roll out with a rolling pin. Heat on a griddle or frying pan. Et voila!

Great quality rice flour, I made gluten free peanut cookies with this flour and they taste fab. Biscuits seem to last a few extra days when made with this flour

When I have to make something gluten free I find this rice flour an excellent 'all purpose' substitute because it makes everything wheat flour can but slightly lighter and softer/retains moisture better. Very versatile and satisfying.

I purchased this to make gluten free brownies and they were amazing. We made a massive batch to take on holiday with us and my partner kept secretly sneaking off to eat them they were so good! Right after we cooked them they tasted slightly floury but after they had completely cooled they were fudgey and rich! Mmm

I always say, if you want to bake a cake that has exactly the same consistency as a shop bought birthday cake (that elusive, fluffy lightness that eluded me for years) add one to two ounces of rice flour in your recipe. It never fails to make a charming cake, an it means a 1kg bag lasts for ages.

I like that this can be pretty much used in the same way as regular wheat flour. My baking has tended to be drier than before though, but I have had to drastically change my diet so that could also be down to a number of other changes in ingredients. (wheat-free, dairy-free, sugar-free...) Nevertheless, I am getting some nice results on many different recipes :) Have made cornish pasties, lemon biscuits, a lovely 'madeira' cake with fresh cherries and real lemon in it... :)

Light and powdery, rice flour is an ideal coating for frying or deep-frying anything. It makes a very interesting batter, that browns beautifully and is deliciously crispy, without overpowering the food that it's coating. Also, it is easier to digest than most batters or flours when fried.
And of course, it really helps any gluten-free recipe!

Tips

basic rice milk - Thu 19th Sep 2013

Plain milk is very easy to make from rice flour as all you need is water (cold or hot), but adding extra things like a pinch of salt and a teaspoon of sunflower oil (or any oil) helps to elevate the flavour.
