Recipes

Banana, Date and Walnut Bread - Fri 7th Sep 2012

Combine 4 ripe mashed bananas with 100ml sunflower oil, 100g chopped dried dates, 50g chopped walnuts, 75g jumbo oats 150ml wholemeal flour, 1tsp baking powder and 1tsp vanilla essence. Pour into a loaf tin and bake at 190 C/gas mark 5 for around 50 minutes.

Wholemeal Oat Biscuits - Mon 30th Jan 2012

Place 175 g medium oatmeal in a bowl and sift in 75 g wholemeal flour and 1 tsp baking powder, returning the bran from the sieve to the bowl. Add 65 g margarine and rub into the flour until the mixture resembles breadcrumbs. Stir in 50 g demaerara sugar, 1 lighly beaten egg and 1-2 tbsps water to make a soft dough. Roll the dough out on to a lightly floured surface and stamp out 24 biscuits using a 8 cm round cutter. Place biscuits onto two lightly oiled baking sheets, prick with a fork to prevent them from rising, then brush with xx tsp milk. Bake at 180 degress C/gas 4 for 8-10 minutes until lightly golden.

This flour is fantastic for making pastry and bread, although I find best results come from mixing it with white flour, or it can be a bit too heavy. A really nice taste.
