Recipe

Organge Muffins with Fairtrade Chocolate Chips Ingredients For approx 12 muffins 250g of plain flour 1/2 tsp of salt 3 tsp of baking powder 100g of Billington's Fairtrade Light Brown Sugar 1 egg, beaten 120ml milk 125g natural yoghurt 75g butter, melted and cooled 1tsp finely grated orange rind Organic Seed & Bean Rich, Fairtrade, Tangerine Milk Chocolate (85g bar) chopped Method Pre-heat oven to 200°C, 400°F, Gas Mark 6. Fill a muffin tin with 12 paper cases Sieve the flour, baking powder and salt and mix in the sugar. In another bowl, mix together the egg, milk, yogurt, melted butter and orange rind. Add the wet ingredients to the flour mixture and fold in gently. Then add the chocolate chunks and stir them in. Spoon the mixture into the muffin cases and bake for around 20 minutes (the tops should spring back when touched). Cool on a wire rack.

Easy Scones - Fri 25th Oct 2013

The secret of making light scones is to work the final dough as little as possible, this recipe is really easy and makes a nice light scone.

3 cups of plain flour.

4 teaspoons of baking powder.

Half a teaspoon of fine, unrefined salt.

Half a cup of caster sugar.

Third of a cup of vegan margarine, butter if you aren't vegan.

Three quarters of a cup of cold vegan milk, I like to use rice milk.

Preheat the oven to 180 degrees centigrade and lightly flour a baking tray.

Sieve the flour into a bowl, add the sugar, salt and baking powder and mix well.

Add the vegan margarine and rub into the dry ingredients until the mixture is crumbly.

Gently pour in the liquid and combine using a butter knife to push it all together, remember the less working, the better the scone.

Empty the mix onto a lightly floured surface, push the mix together gently, do not over handle. Flatten it slightly, then cut out 12 round scones.
Place them gently onto the prepared baking tray and lightly brush with a little extra milk.
They will take about 18 - 20 minutes to cook.
We have these mostly for breakfast, great with St Dalfour jam.

This is a fantastic all-round flour, and I always have a stock of it in my cupboard. Great for making pastry, biscuits and sauces. It's fine for bread, too, if you don't have any strong flour around.
