In Japan, sea vegetables have long been a staple food, prized for their varied flavours, their versatility in use and their natural goodness. They are now recognised as a valuable part of a healthy wholefood diet throughout the world.
Nori is the most popular of all sea vegetables, both in Japan and around the world. For over 300 years, nori has been cultivated in Japan's gentle bays and narrow inlets. Harvested during the cold winter months, it is carefully washed, then slowly and evenly dried in square sheets, much the like the old-fashioned way in which paper was once made.

Serving Suggestion

Use straight out of the packet to make sushi rolls, or cut with scissors into quarters for wrapping rice balls. Cut into thin julienne strips for a flavourful and attractive garnish for grains, noodles, soups and salads. Children love it as a tasty, instant, 100% natural snack.

Recipe

Sushi Rolls Makes 24 pieces

2 sheets Clearspring sushi nori (cut in half)
230g cooked organic sushi rice
½ cucumber cut into fine strips
2tsp umeboshi puree Sushi mat

Sushi vinegar mix:
2tsp brown rice vinegar
1tsp mikawa mirin or rice mirin
OR
1tbsp Clearspring sushi rice seasoning

- Season the cooked rice with the sushi vinegar mix or rice seasoning, using cutting and folding movements with a spatula to mix it in well
- Place sushi nori with the shiny side down on the mat
- Spread ¼ of the rice evenly over the nori leaving 1cm clear at the top
- Make a hollow allong the centre of the rice, spread over umeboshi puree and lay on the fillings
- Begin rolling the mat from the near edge keeping the filling in place with your fingers. Roll firmly but do not press so hard that the rice comes out of the ends
- Once you have formed a roll with the mat, squeeze the roll gently but firmly while pulling the end of the mat to tighten the roll
- Remove roll from mat and cut into 6 pieces with a sharp wet knife using a gentle sawing motion.
- Repeat with the other sheets

A good ingredient to have in stock for being a quick way to add extra taste and nutrition to a wide range of meals. The Nori sheets are easy to tear into smaller pieces.

This is the best nori I have used to make sushi. I don't use raw fish and make it with brown short grain rice usually. Tastes great and has so many minerals. Good to eat on its own too.

Not just for sushi! Cut or crumble to use as a garnish. Has a strong and salty taste so use sparingly in this way. If you're trying to cut down on salt this is great addition to your meals.
