Clearspring Agar Flakes are prepared in the traditional way in Japan by cooking selected sea vegetables until soft then naturally freeze drying outside in the winter sun and snows. They have a neutral flavour and are free from any chemical bleaching or softening agents.
Agar Flakes are a high quality vegetarian alternative to gelatine for making desserts, jellies and aspics.

Fruit jelly - Fri 31st Jan 2014

2 cups of orange juice.

2 cups of pineapple juice.

4 teaspoons of agar flakes.

1 cup of pineapple chunks.

1 cup of orange segments.

Pour the juice into a saucepan and sprinkle on the agar flakes.

Allow the agar to soften, takes about 3 minutes.

Bring the juice to a boil, stirring until the agar is dissolved.

Simmer for 5 minutes, remove from heat and pour into 4 desert dishes.

Allow to cool until it begins to gel, before set, stir in fruit pieces.

Refrigerate until set.

Agar is a surprisingly discreet but powerfully efficient kitchen aid.
Much more straightforward than gelatin, it can come in the shape of flakes, powder, or sometimes bars.
Only a tiny bit added to stewing fruits, and you end up with a lovely kanten or jelly.
It is fully natural, since it comes from seaweed, and you need only a little for the most remarkable results. Completely bland taste so will not invade your favourite recipes!
