Kombu is a versatile and easy to use sea vegetable or seaweed, traditionally Kombu is used to make a tasty multi-purpose cooking stock. It accentuates the natural flavours of the foods it is cooked with.

Serving Suggestion

Add a little Kombu and light soy sauce to replace fish sauce in recipes

Usage

To prepare: soak an 8-12inch long strip of Kombu in 1 litre of water for 20-30 minutes. Then bring slowly to the boil and simmer gently for 5 minutes. The stock can then be used as a soup base and the Kombu reserved for cooking with beans or vegetable dishes.

Cautions

Sea vegetables are naturally rich in iodine. Iodine is essential for good health but excess intake may affect thyroid function. Guidance from food safety authorities suggest limiting consumption of this sea vegetable product to mo more then 5g per week (dry weight) for adults. Children under 4 years of age are recommended a third of this quantity.

Best sushi seaweed - Sun 17th Apr 2016

I buy kombu to flavour the rice vinegar dressing that I make for my sushi rice. This seaweed is good quality and gives my rice much more superior flavour than many others I've tried. My family and friends love it. The seaweed itself comes in strips that are just the right size to flavour one lot of dressing so there's minimal fuss.

I'm adding small strips of this to grains and legumes during cooking in order to enhance digestibility and nutrition. As yet cannot detact a strong taste, but am using small amounts. There is plenty in the packet and this should last a good while. I have confidence in the Clearspring brand to source a clean, high quality product.

These help make fabulous stock/broth which can be used for all kinds of dishes and stuffing - it also makes delicious soup water to make rice in. The pieces can be fried too for a great addition to fry ups!

It might seem a bit on the pricey side, but it lasts for ages, and it's a really easy way to add depth and flavour to simple, broth-based soups and stews. You can also use it to make a tasty "stock". Highly recommended.

1 strip added to soups and stews gives a great taste and texture to the liquid. I've been eating sea vegetables for years and in my opinion, clearspring are the best as the seaweeds are all very clean and the very best quality.

These are amazing to put in your cooking water as they give that natural umami(sp?) taste that you would otherwise get with synthetic additives. btw, they naturally get a bit slimy after soaking. Kombu is the only seaweed that needs extensive soaking or cooking since it's not as tender as nori, dulse or wakame. Kombu is very good for you as it's the richest in iodine.

Kombu is a great ingredient to add to stews, soups and stocks, as well as pulses. It helps cooking them, and digesting them properly. It swells up A LOT and is quite rubbery, so I usually cut it in very tiny bits before I add it to my dishes. Once cooked, it looks like thick leek greens.
It gives a lovely taste to everything it cooks with, the perfect all-natural flavour enhancer!

This is great for adding to hearty soups and stews to get a full but distinctive flavour. It cuts down on gas from cooking beans/pulses and also reduces cooking times too.

It swells lots when cooked and looks like rubber!

Fry kombu in sesame oil and sprinkle with tamari soy sauce once it's done -a great bacon substitute, and actually tastier and crispier!
