Agave syrup comes from a cactus like plant that is native to Mexico. It is intensely sweet and has a mild flavour, making it an excellent alternative to sugar, honey, maple syrup and artificial sweeteners in baking and drinks.

Flapjack recipe with agave syrup
200g unsalted butter
200g demerara sugar
200g agave syrup
450g oats

Lightly butter a 20cm x 30cm cake tin. Put the butter, sugar and honey in a saucepan and heat, stirring occasionally, until the butter has melted and the sugar has dissolved. Add the oats and mix well.

Transfer the mixture to the prepared cake tin and spread to about 2cm thick. Smooth the surface with the back of a spoon. Bake in a preheated oven at 180C for 15-20 minutes, until it's lightly golden around the edges but still slightly soft in the middle. Let it cool in the tin, then turn out and cut into squares.

Sweet Balsamic Strawberries - Tue 5th Mar 2013

Sprinkle a teaspoon of balsamic vinegar over a serving of strawberries. Serve with mascarpone or ricotta and agave for drizzling.

Lovely. It says it is extremely sweet but I don't find it too sweet at all. It has a nice flavour and is good drizzled over homemade popcorn.

I dislike baking with sugar so use this as a substitute and only use less than recipe states - nice in scones or crumbles - versatile and convenient to use

I absolutely adore this - it's just so delicious on everything from porridge to topping off cakes like sponge or cupcakes. It's very sweet and a little goes a long way so bear that in mind when adding to drinks but for food it's like a healthy treacle, you feel like you're having a naughty treat but it's actually healthy, and it also cooks really well leaving a nice glaze.

I use this as well as date paste to replace refined sugar in most recipes. It is very sweet so only a small amount required.

Just a few drops is all you need to sweeten a mug of coffee or tea, so it is a relatively economical alternative to sugar. Great to make desserts too like rice pudding or to sweeten natural yogurt etc.
