Pancake Recipe: Makes about 8 pancakes!

You will need:
2 eggs
2 tablespoons Biona Virgin Coconut Oil or butter, melted.
5 tablespoons of semi-skimmed milk or whole milk.
1 tablespoon Biona agave syrup light
1/4 teaspoon salt
2 tablespoons sifted Biona Organic coconut flour
1/4 teaspoon baking powder.


Blend together eggs, oil, milk, agave syrup and salt. Combine coconut flour with baking powder and thoroughly mix into batter. Heat 1 tablespoon of coconut oil in a skillet. Spoon batter onto hot skillet making pancakes about 2 1/2 to 3 inches in diameter. Batter will be thick, but will flatten out when cooking.

This is the first time I've used coconut flour in my cooking and it's an ideal way to thicken my curry sauce.

Perfect for so many grain free recipes! For some reason I seemed to notice that this flour was a little less absorbent than the other coconut flour brand I normally buy but still made the best banana blueberry pancakes:)

It takes a while to work out coconut flour - but it's worthwhile! - You can't replace like for like with normal flour - I recommend following a recipe, but find the right one and the results are really good. I recommend pancakes as a good start point. Slight coconutty flavour but not overpowering.

So tasty but works completely differently to standard plain flour. It absorbs loads of liquid! I love to use this as a healthy alternative when making treats for my dogs.

What a difference this flour makes! I make Indian sweets and this coconut flour has become incredibly useful. I use it the same way as desiccated coconut. This flour has a very coconut rich taste, so it will do well in most biscuits and cakes. Why I find this flour good, is because sometimes when I've use desiccated coconut, the end result has tended to harden and become inedible. This flour allows for even distribution in mixing your ingredients without lumping or clumping and makes for a softer end result. It really works for me and I can't do without it. A small amount goes a long way.

I've tried many brands of coconut flour and this one ticks all the boxes. It's not quite as fine as others so needs to be sifted, hence four stars, but for the price compared to others (which you have to sift anyway) who cares! Just remember not to eat too much in one go...VERY high in fibre!

Love this stuff!Would highly recommend for those trying to avoid grains. I have made perfect cakes brownies etc with this stuff. And a little bit goes a long way. e.g cake recipe 50g coconut flour.

Coconut flour soaks up alot of liquid so when baking with coconut flour it works well to mix the coconut flour with the liquid ingredients in advance. Beat these together well to remove any lumps and let stand for 15 minutes or so to allow to settle and soften. Then add remaining dry ingredients to this mix.
