Easy Peasy Soup - Sat 19th Oct 2013

This is the easiest soup I have ever made, it is also delicious. My daughter-in-law has always disliked peas, she doesn't now, she has been converted by this soup and makes it herself.

I bag of frozen peas.

2 cloves of garlic.

Water, filtered if possible, enough to make it into a soupy consistency.


Smoked Paprika.

Place peas, garlic and salt in a blender jug, adding enough water to more than cover the frozen ingredients. I tend to add enough water to make a slightly thinner soup than I want, which will allow it to reduce to the perfect thickness when cooked. You can also add a 200ml tin of coconut milk if you want a really rich creamy soup but it is not a necessity.

Blend the ingredients until smooth.

Transfer the blended ingredients to a pot and allow to cook for 20-30 min, simmering gently. At this point you can add more salt if necessary.

When served sprinkle with smoked paprika.

This has been compared to Pea and Ham soup by everyone I have served it to. They always ask for the recipe and can't believe it has so few ingredients.

Mushy peas - Wed 7th Aug 2013

Other types of peas are usually used for mushy pea making but regular ones can be worked with. Just boil or steam the required amount until tender then drain and allow to cool for a bit. Now add the peas into a blender and blend into a paste and that's it. Scoop out and add sea salt to taste if desired and enjoy with fish and chips with ketchup on the side.

Try mixing lightly cooked peas with shredded chicken, mayo, diced onion, curry spices, almonds and raisins.

Lemony Greens - Fri 10th Feb 2012

Steam or boil (separately) 200 g peas, 250 g green beans, 1 big head broccoli (cut into small florets) and 250 g shredded green cabbage until just tender. Drain, then quickly rinse under the cold tap and drain again. Put 25 g butter in a large pan and heat gently until piping hot then add a good squeeze of fresh lemon juice and the vegetables. Toss everything together until hot and coated with the lemony sauce. Season with lots of black pepper and add another squeeze of lemon before serving.

Creamy Green Dip - Wed 16th Nov 2011

Cook 75 g peas until just tender then drain. Put 75 g young leaf spinach in a colander and pour boiling water over until wilted. Run under cold water to cool, then squeeze out all the excess water. Put the spinach and peas in a food processor with the flesh of 1 large ripe avocado, 100 g cream cheese and 1 tbsp chopped fresh mint, and whiz until smooth. Season to taste and serve with vegetable crudites, grissini or strips of pitta bread.

Try... - Wed 20th Jun 2012

Try making crostini with peas and stilton. Slice a crusty white stick into 1cm-thick slices, then brush with olive oil and place under a grill for 1-2 mins until lightly browned. Melt 1/2 tbsp butter in a pan over a medium heat, add a couple of handfuls of frozen peas, cover and cook for 5 mins. Take off the hob, then mash the peas with a fork and season with salt and freshly ground black pepper. Crumble in some Stilton, the zest of 1 lemon and some freshly chopped dill. Spread the mixture onto the baguette slices and sprinkle with extra Stilton before serving for a delicious savoury snack.

Minted Peas - Sun 8th Apr 2012
