Recipe

Spinach and Cream cheese Lasagne
Ingredients:
1tbsp olive oil
1 onion, chopped
1 garlic clove, crushed
2 celery sticks, finely chopped
2 carrots, finely chopped
1 tbsp tomato puree
800g tinned chopped tomatoes
pinch sugar (optional)
1 kg frozen spinach
300g cream cheese (or dairy free cream cheese)
3 tbsp grated Parmesan style cheese
2 tbsp fresh mint leaves
10 lasagne sheets
Salad and crusty bread to serve

- Heat oil in a large pan
- Add onion, garlic, celery and carrots to the pan and cook until softened
- Stir in tomato puree and cook for 5 min
- Add tinned tomatoes and simmer for 20 min
- Use a liquidiser or hand blender to puree the sauce until smooth and thick
- Add a pinch of sugar if tomatoes taste too acidic.

- While the sauce is cooking, make the spinach filling
- Place the frozen spinach in a pan and heat gently until defrosted
- Drain any liquid from it and leave to cool

- Pre-heat the oven to 180°C/3501°F/Gas 4
- Put cream cheese into a bowl and stir until smooth
- Add the spinach, half the Parmesan-style cheese and mint
- Spread a layer of tomato in an oven-proof dish, followed by a layer of the spinach mixture, top with lasagne sheets
- Repeat the process of layering tomato, spinach pasta, ending on a tomato layer
- Sprinkle the top with the remaining Parmesan-style cheese
- Bake for 30 min until bubbling and golden on top
- Serve with salad or your favorite gluten free bread.

I usually make my own lasagne pasta ( which is very easy) but decided to try this on a lazier day - worked really well, easy to use and tasted just as good as my own.

These are really nice for making vegetable lasange - with or without lot's of sauce because they soften nicely whereas other brands I've used tend to stay hard in places and get brittle with cooking if the sauce doesn't misses spots. Other lasange sheets can also be quite dry and cardboard tasting but these ones blend nicely with the other ingredients.
