Billington's natural golden caster sugar is carefully produced to lock in rather then refine out the natural molasses of the sugar cane. It is this difference which gives Billington's sugar it's unique richness, depth of flavour and natural colour.
Ideal for baking shortbread, meringues and sponges.

Store in an air tight container. In certain weather conditions this natural sugar may harden. This is not a sign of deterioration. Just place the sugar in a basin and cover with a damp cloth. Leave overnight and the moistness will return.

Lemon, Poppy and Raspberry Sponge. - Thu 21st May 2015

Remove the zest from 2 lemons and reserve the juice. Make a basic sponge using 225 g each caster sugar, self-raising flour and unsalted butter, 4 eggs, 1 tsp baking powder, 2 tbsp poppy seeds and the lemon zest and lemon juice. Divide between 2 sandwich tins and bake 25 mins at 180 degrees C or gas 4. Sandwich cake together with lemon curd and a layer of fresh raspberries. Ice using 225 g icing sugar and the juice of around 1 1/2 lemons. Enjoy.

Strawberry & Orange Crush - Wed 5th Feb 2014

8 oz strawberries, washed, hulled and cut into quarters.

1 and a half oz ( 45 g) of caster sugar.

Juice of 1 orange.

A dozen torn up mint leaves.

Fizzy mineral water.

Mix the strawberries with the mint and sprinkle over the sugar and orange juice.

Cover and leave overnight in a cool place.

The next day - line a sieve with muslin, tip the mixture in and gather up the up the material - squeeze firmly to extract all the juice.

Transfer to a jug or glasses and top up with the sparkling mineral water.

This is a real treat, so delicious and much nicer than shop bought fruit drinks.

Plum Compote - Tue 5th Mar 2013

Stone and roughly chopping 4 large plums and place in a small saucepan with 2 1/2 tbsp golden caster sugar and 2 tbsp red wine vinegar. Cover and simmer on a low heat for 6-8 mins, then gently stir for a further 2 mins until the plums are soft. Cool and store in a sterilised jam jar or glass container to use as a sweet, tasty topping for toast, crumpets, cakes or desserts. It can be stored in the fridge for up to 7 days.

This sugar has a lovely smell, like caramel and is delicious in cakes, scones and as a sprinkle.

I don't find it as sweet as some other types of sugar hence I can use it in my tea too and I just made French toast with it this morning but had to use twice as much as I thought to taste the sweetness so I don't think I'd like it in cooking but for those who don't have a sweet tooth it'd probably be better suited and last longer. I do like it very much in my tea though in which it tastes more delicious than the molasses, muscovado and demerara that I have - I find those are better for cooking but at the end of the day I prefer sugar cane caster sugar to sugar beet Brown sugars.
