Recipes

Pumpkin Milk - Fri 18th Oct 2013

Half a small cup of pumpkin seeds, soaked overnight. Discard the soak water before using.

A handful of dried fruit of choice, eg - dates, figs, apricots, raisins etc. soaked overnight, do not discard the soak water

Water, enough to make into a milky consistency, ice can be added as well to make an instantly chilled version.

A pinch of good quality salt.

Place all ingredients into a blender jug and blend until smooth.

This will keep in the fridge for up to 3 days if bottled or jarred, we never manage to do this as it is usually drunk before 3 days. This milk is very nutritious and tasty, a real treat. You can adjust the amount of dried fruit depending on how sweet you want it to be, maple syrup or xylitol can also be used to sweeten this recipe.

Soak a cupful for half an hour or so, melt a spoonful of coconut oil in a glass dish, add a soup spoon of coconut sugar, teaspoon of ground cinnamon, and a dash of anything else you like eg tamari sauce, pepper, salt. Low bake at 140C for about 20 or 30 mins, stir once or twice. Let cool and put in a glass jar for a take-out when you need to eat away from home.

Healthy seeded bars. In a large mixing bowl...1 cup applesauce or pumpkin puree, 1/2 pumpkin seeds, 1/4 sunflower seeds, 1 cup dried fruits (whatever your fav is) 1 cup oats, 1/2 cup diary-free milk, 1 egg or egg replacement, 1/2 honey... Mix well and pour into square baking tin. Bake for 25-30 mins in medium oven and devour!

Such a great quality of pumpkin seeds. I toast them for my morning millet porridge everyday. Great source of high protein, iron and magnesium. They are powerhouse wrapped in a very small package.

You can see the goodness in these ,good quality seeds with so many uses. If you don't mind your smoothies a bit rough, throw in a spoonful of seeds,make a lovely combined texture.

I have bought my (non-organic) pumpkin seeds from the supermarket for ages, but decided to get some of these organic ones as the price works out at around the same and I tend to eat some every day with my dinner. They seem good and a nice green colour. Would happily buy more.

Good-sized, tasty pumpkin seeds. Made pumpkin seed milk, which was very strong-flavoured, but tasty (good for use in porridge, chia porridge where other flavours dilute it slightly).
