Hazelnut Sauce: Grind 50g hazelnuts in a food processor. Add 2 cloves garlic, 2 tbsp lemon juice, 2tbsp water, 2 tbsp Greek yoghurt. Process until smooth. Serve with pasta or as a dip.

Hazelnut milk - Tue 8th Oct 2013

To make hazelnut milk - simply soak a handful of hazelnuts overnight, also soak a dried fruit, can be apricots, figs, dates, sultanas etc. I like this particular nut milk with apricots or dates. the more fruit you add, the sweeter the milk. Drain the soak water from the nuts and put them in a blending jug. Add the dried fruit (including the soak water) and some extra water (you can make it creamy or thin depending on the amount of water added). If you have a good blender (a Vita-Mix for example) the milk will be ready to drink after a short blend. Otherwise, drain the milk through a sieve or jelly bag. Any bits left after draining can be added to muesli, cereal or as an extra ingredient in cake, biscuit or bread making. This milk is delicious, cheap to make and nutritious. This milk can also be made using other nuts and seeds.

Great hazelnuts, very fresh, with a good flavour, my wife uses these mainly for making nut milk, they make a very rich, creamy, full flavoured milk. She uses soaked dates as a sweetener, vanilla and celtic salt for flavour.

Delicious hazlenuts have used them ground up in coffee grinder as part replacement for recipes using flour. Also have made delicious vegan truffles and other goodies. Great quality and good price.
