Soaked and blended cashews make the most amazing cream filling for pies or flans, and it's suitable for vegans and those avoiding dairy foods. Here is a recipe for the cashews blended with banana and citrus fruits, but you can blend it with so many other things too.

Citrus, banana, cashew cream filling
makes enough for a 10 inch deep pie crust, maybe more.

120g cashews, soaked 6-8 hours
2 bananas, peeled and broken into chunks
8 dates, pitted*
1 whole orange, zest and juice
Half a lemon, zest and juice (start with 1/2)
Half a lime, zest and juice (start with 1/2)
2 teaspoons vanilla, or vanilla pod

water, as needed

Place soaked and drained cashews in a food processor or blender and process into a paste. Add remaining ingredients (except water), and blend thoroughly, scraping down the sides as needed, until as creamy and smooth as possible. Add water as needed to adjust thickness (how much juice you get out of your fruits will affect this too). This may take 5 minutes depending on the strength of the processor/blender. Taste and add more zest if desired. Use as a pudding or pie/tart filling with fresh fruit. Serve chilled.

*the dates do darken the cream up a bit, so you can use agave to taste if you prefer, or leave it out if you just want to bring out the banana taste.

Cashew Cream - Wed 27th May 2015

Soak 200 g cashew pieces overnight in 150 ml filtered water. In the morning, add the juice of 1/2 fresh lemon, some sweetener if you fancy, and blend until fluffy. This makes a lovely filling for cakes. If you choose to sweeten the mixture, coconut sugar is nice.

I tried the suggested recipe and its really super. I made a light pastry in a tin, put the filling in and gave it a melted chocolate topping.

I made the pie filling as suggested and it was very successful in a flan tin lined with a date and sunflower pie crust, topped with fresh berries. Ideal raw dessert for a special occasion.

Good value cashew nuts, and for most uses I don't find that them being in pieces to be a problem, in fact I think it's better for when having them in/on stir fries.

I 'originally' ordered these for my fiancée and son never having liked roasted salted nuts, I'm more of a regular salted girl, but I thought I'd try one a few weeks ago as I'd run out of normal ones!

I've become addicted to them! They are so sweet and Moreish that one handful isn't enough! I often walk into the kitchen to find the lid off the jar as my boys have been in them too! They are so yummy! 110% recommend!

These are the best value cashews I've found and the quality is no inferior for it. As a vegan I use cashews all the time as a dairy sub- blend cashews with water and a little agave or dates for a sweet cream or lemon juice and salt for a savoury cream etc. They're also super in raw desserts :)
I just wish goodness direct would make bigger bags, I usually order 4-6 in one go!

I purchased these cashew nut pieces as an experiment to find out whether they are as tasty as the whole nuts and I was definitely not disappointed. The pieces are excellent quality; they are very tasty, very moorish and can be used for baking and also for snacking.

Delicious, healthy snack straight from the packet, or great in cooking, such as vegetable curries, stir fries or nut roasts. Also make a lovely topping for crumbles when crushed and combined with xylitol/sugar and flour.

I love using these in just about anything. They go so well in stir frys and curries for extra protein but also just as a snack. Cashews are also great for nut butters and in baking. This brand seems to last and have a great flavour.
