In India, chickpea flour is widely used for its versatility in batters, soups, desserts and some breads. This delicate yellow flour is more commonly known as besan or gram flour. It's a fantastic substitute for eggs and is often mixed as the base of vegetarian omelets.

Banana Muffins:
Makes 6 muffins

Ingredients 3 eggs (or for those vegans amongst us use a replacer ie Ener-G Egg Replacer) 25oz sugar (raw sugar works well) 7 tbsp coconut oil 2 full tbsp sour cream (a recommended vegan replacement for this is 2 tbsp soy yogurt + 1 tsp lemon juice) 2 ripe bananas, mashed (best when very ripe) 12 oz chickpea flour 6oz cocoa powder 1 tsp baking powder Instructions 1) Preheat oven to 175°C/350°F.
2) Whisk egg and sugar till fluffy
3) Add coconut oil, sour cream and mashed bananas.
4) Mix the powdered ingredients together and gradually add to the wet mixture, stirring till completely mixed 5) Add to oven and bake for 20-25 minutes or until golden.

Spicy Leftover Stew. - Fri 22nd Mar 2013

Small bowl of leftover cooked vegetables, diced, with their juices
Teaspoon of whole cumin seeds
Tablespoon of oil for frying
2 heaped teaspoons chickpea flour
Salt and pepper to taste
love of garlic, crushed (Optional)

Mix the chickpea flour with enough cold water to make a slightly runny paste, ensuring there are no lumps left. Put aside.
Boil some water in your kettle.
Gently fry the cumin seeds and garlic (if using) for a couple of minutes. Carefully add the vegetables, adding any juices last to avoid spitting. Stir. Add enough boiling water to give a sloppy consistency. Bring to boiling point.
Add the chickpea paste, stir it in well and switch off the heat.
Add salt and pepper to taste.

Serve as a thick stew, on its own or with rice.
If soup is preferred, add a little more water (or juices) when cooking and serve with bread.

So happy I have discovered this product, it is absolutely delicious and so healthy. I use it to make savoury crepes to fill with all sorts of things or use as a scoop like chappatis. The taste is utterly unique, and the crepes have an excellent texture that doesn't break up even when thin. Really easy to cook; don't need much oil if you have a good non-stick pan. Love this!

This is really good chickpea flour- in my opinion it has a more pleasant taste than the cheaper gram/besan flour alternatives available elsewhere. I've had fun experimenting with it and have found it to be very versatile. A large positive aspect for me is that it creates a smooth batter easily, whereas other besan flours I find more tricky to stop becoming lumpy. Well worth the exta few pennies

Along with soya flour adds a nice smooth taste to soups. stews, currys etc and is gluten-free unless contaminated, plus not as carby as other flours.

This is great. As a new vegan (from vegetarian), I've been experimenting lots. Makes great vegetable 'bhajis' - just mix chick pea flour with water and spices of your choice, dip vegetables in and fry. It also makes great soyburgers which I have to say are my favourite 'vegan' burgers. Just mix Goodness Organic soy mince with some soysauce/bouillon, crushed garlic, your favourite spices and some chick pea flour, make into balls and fry - really yummy. By the way these recipes are from books and the internet, so I can't take credit for creating them!!
