Our Medium Polenta is a coarse ground maize (cornmeal) used in soft polenta, grilled or fried polenta and gluten free pasta.

Serving Suggestion

Prepare the polenta, cut with a pastry cutter into rounds to make more interesting shaped slices. Polenta slices can be frozen for up to a month. To use: defrost and reheat in the oven (180 degrees C, gas mark 4)for 20-25 mins until piping hot.

Cooking Instructions

Polenta is very versatile and can be used in so many many ways, but the basic way to prepare is to boil in water: Take 750ml (1 pint 5 oz) water or stock to every 120g (4 oz) polenta. Method 1. Bring water to a boil. Reduce to a simmer. Pour in polenta steadily, stirring constantly. (You could premix a little of the cornmeal with cold water to a paste to get rid of any lumps). You may want to add a little salt to taste). Continue to stir and simmer until polenta is thickened. It should come away from sides of the pan, and be able to support a spoon. This can take anywhere from 20 to 50 minutes. (Add a couple of knobs of butter at this point if desired). Pour polenta into a bowl in which it will form a shape. Leave to stand a few minutes. Turn out onto a cutting board, and slice into thick slices. Can be served as is with a tomato sauce/pasta sauce and cheese etc or can be grilled or fried. The variations of Polenta are as endless as your imagination. Traditionally the Polenta may have fresh mixed herbs folded in before being removed from the pan. Typical herbs may be parsley, mint, chives, chervil, basil and ground black pepper. Also fold in finely sliced onion, plum tomaties and various cheeses. Serve with cheese, porcini mushrooms, a little butter, or herbs.

When cooked stir in a bit of soya marg, then serve topped with a mixture of cooked tinned tomatoes, onion, mushrooms, chopped vegan sausage and spices. Delicious.

I'm currently trying to alter my diet to take a more healthy slant, and I'd heard that cornmeal made into polenta, was extremely versatile and a staple food for a lot of cultural dishes. I've spent the last few days cooking, baking, creating and scoffing, and everything I've made with this stuff, has come out fabulously. I've replaced mashed potato with stuff, I've made cakes and cornbread, I've added it as a thickener, and I've even baked double chocolate chip cookies with it. I seriously cannot get enough of it!

I love polenta! It can be used in any variety of savoury or sweet dishes, it's very filling and has a beautiful colour.

Goodness polenta is the nicest I've come across, lovely yellow colour cornmeal and superb value...there really isn't any competition to match it! In America one of the most popular mealtime side dishes is cornbread...and thats with good reason! Hot, steaming, moist and delicious, this healthy 'bread' is perfect with soups, chowders and stews. You can also have it for desert, smother it with honey or maple syrup and top with strawberries (and cream if feeling decadent!) and you've got yourself a different but delicious treat...Give it a go, you'll be pleasently surprised!

I purchased this as myself and my baby are allergic to wheat so thought this was a good alternative. The packaging was very simple, which was fine but I was disapointed to see that there were no cooking instructions on the back. Also it had an allery warning - may contain nuts/peanuts. Therefore I have had to throw it out as my baby is also allergic to peanuts. This warning, as far as I could tell wasn't on the description as I would not of purchased it. Was a disapointing buy for me.


A batter alternative - Sat 21st May 2011

Mix polenta with fine sea salt and maybe dried herbs or pepper, depending on your tastes.
Use as a batter for tempeh fingers, or seitan, or chicken or fish or... you get the idea! and fry happily, it is incredibly light and delicious
