Pinhead oats have a coarser texture than rolled oats and add texture to porridge, soups and crumbles. Pinhead oatmeal is also known as steel-cut oats, coarse-cut oats, or Irish oats. Many people confuse Scottish Oats or Scottish Oatmeal with steel cut. However Scottish Oats are steel-cut oats that have been first steamed and are then ground into an oatmeal.

These are whole grain groats (the inner portion of the oat kernel) which have been cut into only two or three pieces. They are more yellowy and golden than oat flakes and are not dissimilar to broken rice.

Cranachan Souffle

Souffle ingredients: 25g butter, 25g pinhead oatmeal finely ground, 4 egg whites, 4 tbsp caster sugar, 225g raspberries, 175ml ready-made custard, 1-2 tbsp icing sugar for dusting.
Cranachan cream ingredients: 25g butter, 75g pinhead oatmeal, 150ml double cream, 2 tbsp whiskey.
Compote ingredients: 2 tbsp icing sugar, 200g raspberries.

Heat over to 210c/425f/Gas 7
Grease four large ramekins with the butter and dust with pinhead oatmeal.
Whisk egg whites till they form soft peaks. Slowly whisk in the caster sugar until stiff peaks are formed.
Then whisk in the raspberries so that they break up well and combine with the egg whites.
Fold in the custard.
Spoon the mixture into the ramekins. Place them ramekins onto a baking tray and bake for 6-8 minutes, or until risen and golden-brown. (Make sure you don't open the oven door while they're cooking.)
Heat a frying pan until hot. Add the butter, then the oatmeal and toast until it's a light golden colour. Then allow to cool.
Whip the double cream and half the icing sugar in a bowl to the soft peak consistency. Fold in oatmeal and whiskey and set aside.
For the compote, heat a frying pan, add the raspberries and remaining icing sugar and stir until the two combine and become a thick sauce.
To serve, spoon some compote onto serving plates, place a good dollop of cranachan cream on top of each soufflé, dust with icing sugar and place onto the serving plate.
Invite someone for dinner and show-off!!!

I used these in a recipe for overnight oatmeal as opposed to rolled oats which is what I normally use. I loved the chewy texture and I'm sad to see they are currently out of stock. Hopefully by the time I reach the end of the (massive) bag it'll be available again.

Bring to the boil on the hob, then put in the simmering oven overnight. No salt necessary. A quick stir and its ready to eat (add a little salt and/or sugar or honey to taste if you wish, but it is great without). A superb, slightly nutty textured porridge that will keep you from hunger all morning. The real deal!

Absolutely marvelous

1 pint oats

3 1/2 pints of water

1tsp salt

3 peeled, cored and chopped apples

250 grams sultanas

Overnight in the slow cooker

I divide the leftovers in portion size bowls - cover with clingfilm and refrigerate - lasts me the week - often eat chilled straight from the fridge or add tbs water and microwave 4 minutes on max

The return of real porridge - Mon 18th Jun 2012

Yup, after a long break from decent porridge, the real deal is back. Not one supermarket stocks this product, but that's lowest common denominator retailing for you.

Yet another means of making porridge.
On the evening before the morning you want your porridge:

One handful of oats per person into a pan.
Add a good pinch of salt per person.
Pour boiling water into the pan, very roughly 3x as much water as oats
Bring to the boil, remove from the heat, give it a good stir, bung a lid on.
Go to bed.
Next morning you'll probably need to add a bit more water, but in any event when it's the right consistancy, bring the gloop to the boil and then simmer gently for 5-10 mins.

Pop serving into a decent sized bowl, add milk and/or cream. Demarara sugar works well, but Golden Syrup works better.

I make it with;
1/2 cup pinhead oats
2/3 cup of rice milk
2/3 cup of water (may need a topping up by another 1/3, usually add in last 10 minutes if needed)
A dash of semi skimmed milk on the top when dished out.
No sugar or honey needed, unless you want to, tastes lush without though.

Tastes like porridge but with twice as much flavour and the texture of rice pudding.

1 cup pinhead oatmeal
3 cups full fat milk
2 cups water
Put in slow cooker on low for 7-8 hours, no effort and wake up to a delicious bowl of porridge

Pinhead oats are the whole grain chopped into small pellet-like sizes ("pinheads"), so you're getting all the nutrients of the whole oat instead of just from the inner parts. So you get all the oatbran, oatgerm and oat starch. Shame it's not organic.
