Summer Barbecues – mains, sides, salads & desserts… vegan-ly perfect!

Even though there may be a few dull days here and there, summer is definitely on its way. Now is the time to plan for some seriously delicious barbecue parties… vegan-style! Meatless ribs, kebabs and burgers, side dishes, salads, desserts and drinks – we’ve put together some of our favourite recipes for summer dining outdoors.

You don’t have to be vegan to love these!

Meatless Mains

BBQ (Seitan) Ribs with Spicy Sauce vegan spare ribs with potatoes and zucchini

Ingredients

BBQ Sauce: makes about 1.5 cups

Method

  1. Combine all the ingredients in a mixing bowl and whisk together.
  2. Cover the sauce and leave to stand so flavours blend.
  3. Meanwhile, slice steaks lengthwise and grill as per instructions on packet but only for half the time.
  4. Then spoon some of the bbq sauce over the steaks and continue to grill, adding more and turning until cooked.

Serving suggestion: Serve with crispy potato cubes and grilled courgette.

Vegetable Kebabs

Method

  1. Prepare vegetables to even size chunks/slices
  2. Leave tomatoes whole
  3. Alternate vegetables onto skewers and brush with olive oil
  4. Grill, turning frequently till done

The Ultimate Veggie Burger Vegetarian burger

Makes 2

Ingredients

Method

  1. Following instructions on the box, place burgers on the grill and turn frequently till cooked.
  2. Toast your buns, keeping an eye on them!
  3. Brush aubergine slices with oil and grill
  4. Serve with lettuce, tomatoes, aubergine and cheese slice. topped with some of the chipotle mayo

Summery Sides

Grilled Mushroom Caps with Cheesy Pesto Delicious stuffed mushrooms with cheese and pesto

Ingredients

Method

  1. Wipe clean and cut off mushroom stalks
  2. Brush tops with olive oil
  3. Stuff with the creamy herbs and top with pesto
  4. Grill on gentle heat till cooked

Wild Rice Salad with Pine Nuts & Greens

Ingredients

Method 

  1. In a large bowl, mix together the cooked and cooled rice, kale, spring onions and pinenuts.
  2. In a small bowl mix together the oils, garlic and vinegar, and mix into the rice ingredients. Serve.

Super Salads

Simple Greek Salad with ‘Feta cheese’

Method

  1. Mix together all the vegetables and oregano.
  2. Add the feta and gently mix together, top with olive oil before serving

Decadent Desserts

Raspberry & Granola Frozen Yoghurt Bites vegan cheesecake

Ingredients

Method

  1. Process or place biscuits in a sealable plastic bags, and pound with a rolling until they reach fine breadcrumbs
  2. Melt oil and mix in a bowl with biscuit crumbs
  3. Place spoonfuls of biscuit crumb base in the bottom of cases and place on a tray in fridge for 2 hours or until firm
  4. Before serving, scoop vanilla non-dairy dessert on top the chilled base and top with fresh raspberries

Tip! Try other dairy-free flavours and complimentary fruit.

Dairy-free Avocado & Chocolate Ice-cream Avocado Chocolate Ice Cream Sundae

Ingredients

Method

  1. Cut avocados in half, remove the stone and scoop the flesh out into a blender.
  2. Blend the avocado until it is of a nice smooth consistency with no lumps.
  3. Add the rest of the ingredients, except the chocolate, to the blender.
  4. Blend on medium until all the ingredients are combined and smooth in consistency.
  5. Pour mixture into a suitable container and add the chocolate and mix together.
  6. Place in freezer for a minimum of 2 hours (for best results leave over night)

Tip! The ice cream might be a bit too hard to serve when you first get it out of the freezer, just let it stand for a minute or two to soften.
