Lecithin is technically a substance called Phosphatidyl Choline that belongs to a special category of fat-soluble substances called phospholipids. In food manufacture lecithin can be used to give a consistent texture of a product. Lecithin can come from eggs but here we provide a range of totally plant based lecithin. Lecithin is one of the richest sources of Choline and Insitol which play their part in the emulsification of fat, maintaining cholesterol levels, maximising brain function and maintaining a healthy heart.
