Using the traditional method of drying apricots you would de-stone them and place them on hot flat rocks in the sun for 6-9 ish days but it can be done using a solar dryer. Eating dried apricots is one of the easiest ways to ensure a good supply of potassium which helps prevent high blood pressure.

It is also rich in soluble fiber which steadies blood sugar levels and prevents constipation. It is said that the darker the colour, the sweeter they are and Organic apricots are meant to be dark as the orange colour from non-organic ones are from a preservative called Sulfur Dioxide which preserves the colour when drying.
