Pumpkin and Apple Salad Ingredients: 3 tablespoons raisins 2 tart apples, peeled and shredded 1 cup shredded pumpkin 2 teaspoons lemon juice Salt and pepper to taste Directions: Place the raisins in a small dish and cover with hot water. Allow to stand for 30 minutes. Once the raisins are plump, drain and place into a mixing bowl with the apple and pumpkin. Pour in the lemon juice and toss to coat. Season to taste with salt and pepper, and serve immediately.
