1 large onion, sliced, 3 leeks, cut into small, fine pieces 3 large potatoes, peeled and sliced, 1 tbsp olive oil, 3/4 pint of boiling water, 2tsp vegetable bouillon powder, 1/2 tsp nutmeg or ground pepper
Brown the onion, leeks and potatoes in the olive oil for ten minutes until the onion becomes translucent. Pour the boiling water over the browned vegetables. Bring to the boil again, add the vegetable powder, and simmer for 10-15 minutes. Liquidize in a food processor or blender and serve how with grated nutmeg (or ground pepper if preferred) sprinkled on top of each bowl

Excellent potatoes - Fri 16th May 2008 Excellent potatoes. After buying supermarket organic potatoes for so long we'd both forgotten what real potatoes taste like.
