Spicy Bean Soup - Mon 16th Jan 2012
Heat 1 tbsp vegetable oil in a pan and fry an onion, a celery stick and a carrot (all chopped) for 5 mins until softening. Add 1-2 crushed garlic cloves, 2 tsp ground cumin and a good pinch of crushed dried chilli flakes and stir for a few mins. Then add 400 g chopped tomatoes, 400 ml hot veg stock, 300 g frozen sweetcorn and a 400 g tin drained borlotti beans. Simmer for 10 mins. Ladle the soup into bowls and serve with lime wedges and tortilla chips, topped with soured cream, green chilli, avocado, red onion and coriander leaves.

These are great for making a quick and cheap pasta dinner. I like the fact that they are ready chopped - one less job for me! I bung them in a pan, add dried oregano, basil, bit of sea salt, olive oil, touch of balsamic vinegar (and sugar - there goes the healthy part). Cook it for at least 15 mins on low-med heat (fine if longer), cook your pasta, drain and mix into the tomato sauce and you are good to go. Some grated cheese is nice on top all melted in...yummy.
