Pineapple & Coconut Granita - Thu 21st Jun 2012
Tip a 400 g tin of pineapple pieces in natural juice into food processor and blitz to a puree. Pour into a pan and add 125 g caster sugar and 200 ml water. Stir over a low heat until the sugar has dissolved. Take off the heat and stir in the juice of 2 limes and 200 ml coconut milk. Transfer to a measuring jug and add enough cold water to make it up to 1 litre. Cool. Pour into a freezer-proof container and freeze for 2 hrs, or until just set. Tip the mixture into a bowl and whisk with an electric beater for a few minutes, until smooth. Pour back into the container and freeze overnight. Break up with a fork and serve in glasses. Garnish with washed raspberries and mint leaves.

I feel that this brand is one of the best you can get at the moment. There is no metallic after taste and when cooking it seems to act correctly because there is not an overuse of thickeners. The product gives a notable coconut smell when opened and a clean coconut taste that is so often destroyed in canning or by additives. It does form a floating cream that can be difficult to disperse at lower temperatures.

I used this as a base for some red Thai curry last weekend and it was so rich and delicious. It doesn't have any weird additives or anything, either.

Fantastic stuff. I have introduced coconut oil, milk and fresh coco flesh into my diet while on my slow/low carb diet. It looks high in the wrong fats but when combined with a healthy low carb diet it can help you loose weight. Tinned coconut milk can be chilled and the solidified contents at the top of the tin can be whipped like normal dairy cream! great for low carbing dieters and lactose intolerant people.

This is one of the best two brands of coconut milk I've come across. It's thick, creamy and has a lot more of the cream than most brands. It's nowhere near as watery as other brands and I can taste the difference when using it in cooking - delicious.

I love this coconut milk - it's my go-to brand each time I want to make a creamy thai curry. I especially love that it's organic and it tastes amazing! It's a little pricier than some other brands I've tried but it's superior in quality, taste and I'd much rather pay a premium for a brand I trust. Best Coconut Milk I've had...and I've tried a few! :)
