Some years ago, Andrew Whitley, founder of the village bakery, travelled to russia in search of real rye bread. He returned with a genuine local sourdough which has leavened their all-rye rossisky and borodinsky loaves ever since. Further research inspired this organic baltic rye bread. Its lighter texture comes from the addition of wheat flour and, with its distinctive caraway flavour and slight sweetness, it is known as one of the favourite breads of northern europe.

Ingredients

Water, wheat flour 37%, rye flour 18%, molasses, caraway seeds 1.5%, low sodium sea salt.
