Recipe
Coconut and Pineapple Shake
Ingredients:
100ml coconut milk, 150g vanilla ice cream, 350ml pineapple juice, 140g frozen pineapple chunks.
Method:
1. Pour the coconut milk and pineapple juice into food processor. Add ice cream and process until smooth.
2. Add the frozen pineapple chunks and process until smooth. Pour the mixture into glasses and decorate.

Prawn Curry - Mon 6th Feb 2012
Heat 1 tbsp oil in a large pan and cook a large chopped onion until softened. Add 2 tbsp jalfrezi curry paste and cook for another minute, then stir in 400 ml canned coconut milk and 400 g canned chopped tomatoes and bring to the boil. Add 500 g raw king prawns and heat, stirring, until cooked through. Add the juice of 1/2 lemon and scatter over some chopped coriander. Serve with steamed rice or naan bread.

Tips
Use as you would Dairy - Wed 13th Oct 2010
I use this product in all cooking and baking. Has high saturate levels but coconut fat is being seen as a very healthy type of saturated fat. It contains considerable amounts of medium chain fatty acids and 40% - 60% of those are Lauric Acid. Lauric acid is found in breast milk and research is showing it is key in fighting infections and is metabolised unlike other fats resulting in it not being stored at fat like normal (resulting in fat loss as part as a health diet). Use coconut milk as you would normal milk in cooking. Put the milk in the fridge and scoop the semi solid cream off the time to substitute dairy cream. Fab Product, try it. The taste of coconut can take some getting used to by some people.
