Use this in Zuurvlees recipe from Limburg area of The Netherlands - a savory (sweet and sour ish type of meal).


Stewing steak (around 1 kilo)/ marinade this in 1.5 cups of either redwine vinegar or clear vinegar for 1 - 3 days in chiller. Also in this marinade use peppercorns, and juniper berry's - and 6-8 bay leaves. Ensure meat is covered by topping up with water.


Separate the meat out from marinade and start cooking 3 or 4 large onions chopped up. To this once softened add the meat, and start cooking this, cover with water and add marinade... slow cook for 2-3 hours... add water to cover now and then if needed. Mash the meat and onions... it should go stringy and the sauce should look loose. Add a pot of this appelstroop equivalent, and mix it up, season to taste with pepper, salt not needed, but extra vinegar is often good to add at this point too,


Serve with Crispy chips, apple sauce and also red cabbage (you dont really need anything except chips really.)
