Lemony Trout with Beans - Sun 21st Aug 2011
Sprinkle the zest of a lemon over 4 trout fillets and grill or baked until cooked through. Meanwhile, lightly boil 225 g sliced runner beans, 200 g fine green beans, and 3 finely sliced spring onions. Cool then mix with a can of drained bubtterbeans. Make a dressing by whisking the juice of a lemon with 2 tsp Dijon mustard, 1 tsp honey, 2 tbsp olive oil and 2 tbsp chopped mint. Season to taste, pour over the warm bean salad and toss together to coat. Serve with the trout and extra lemon wedges for squeezing.

Chorizo with Beans - Sun 5th Feb 2012
Fry a roughly chopped onion until softened then stir in 150 g chorizo, cut into chunks. Add 2 drained 400 g cans butter beans, a 400 g can of chopped tomatoes and some dried chilli flakes to taste. Bring to the boil, then simmer for 5 minutes. Add a good hanful of shredded curly kale and cook for 2-3 minutes until just wilted. Serve with rustic bread.
