Excellent & Unusual Flour - Mon 26th Oct 2009
I used this to make a 'Chestnut Bread' recipe from 'Crust' by Richard Bertinet. Absolutely excellent 'fermented dough' type of bread - like sour dough but a bit less hassle (you can make it, start to finish, in a day & no fussing around for weeks with ferments taking over the fridge etc!!). Wonderful bread with a rich, deep flavour & goregous colour, excellent with game, rich casserolesm, winter soups etc - bet it would be lovely with left over turkey soup or pate. I find Bertinet's recipes pretty much infallible.

..but leave some for me :o) ! I've always loved roasted chestnuts, chestnut stuffing, chestnut puree with cream....(you get the picture!)...so I decided to give this a go. The raw flour wasn't quite what I expected, (pale, with relatively little aroma)...but as the base of a gluten-free, date and walnut loaf, it was nothing short of sensational...rich, moist, fully rounded flavour...and possibly the best texture for a gluten-free cake I've ever tasted (one third potato flour, to two thirds chestnut, and half a teaspoon of tapioca flour to counteract any crumbling)...just a shame it's not available all year round !
