Ingredients:
300ml Boiling water
1 tbsp Clipper Organic Freeze Dried Instant Coffee
2 tbsp Traidcraft Fairtrade Golden Caster Sugar
3 tbsp Brandy or coffee liqueur
2 plain or coffee gluten-free muffins
2 x 300ml cartons of Granovita CremoVita, Organic Soya Cream
200ml Provamel Organic Custard
50g Dairy Free Milk Chocolate Alternative, grated
Serves:
6-8 people
Method:
Mix together the boiling water, coffee, sugar and liqueur and pour it into a shallow bowl.
Cut the muffins into 2cm thick slices and stand them in the liqueur mixture whilst preparing the topping.
Mix together the soya cream and custard. Beat well until smooth.
Remove the muffin slices from the liqueur mixture with a slotted spoon and arrange them in the bottom of a serving dish. Sprinkle over half the grated
chocolate.
Pour the remaining liqueur mixture into the cream topping. Beat it in, then spoon the mixture into the dish.
Sprinkle some more grated chocolate on the top, then chill the dessert in the fridge for at least half an hour.
Serve with extra grated chocolate or with chopped nuts. This is quite rich, so a little goes a long way.

Place 150 g cherries, stoned and chopped into a small pan with 1/2 tsp mixed spice, 2 tbsp brandy and 1 tbsp caster sugar and simmer for 5 mins. Divide 60 g trifle sponges between 8 shot glasses. Spoon over cherries and set aside. When cool top with Provamel custard and chill for an hour. To serve, whip 150 ml cream, top the trifles and sprinkle with grated dark chocolate.

Can be eaten hot or cold, with or without anything! Not as rich as standard custard, but a good, satisfying alternative for vegans.

Tips
Bread, Banana & Custard Pud - Thu 12th Apr 2012
Try cutting four slices of bread in half diagonally. Place in a small baking dish, alternating with slices of banana and small dollops of strawberry jam. Pour over custard and cook in a preheated oven at 170 degrees C/gas mark 3 for around 20-25 mins. Once cooked, sprinkle with brown sugar and grill for a further 2 mins until golden.
