Creamy Mushroom Soup - Sun 15th Jan 2012
Melt 50 g margarine in a large saucepan and fry a chopped onion and a crushed garlic clove for 3-4 mins until softened. Add 250 g sliced mixed wild mushrooms and fry for a further 5 mins until tender. Stir in 50 g plain flour and cook for 1-2 mins. Gradually add 600 ml vegetable stock, stirring continuously. Stir in 1 tbsp chopped fresh tarragon. Bring slowly to the boil, then reduce the heat and simmer for 10-15 mins. Allow to cool slightly, then blend and rub through a sieve. Just before serving add 300 ml Provamel, season with salt and ground black pepper and reheat, without boiling. Serve garnished with more chopped tarragon.
