Apricot and Cardamom Rice Pudding - Tue 19th Jul 2011
Put 1 litre Provamel soya milk into a pan with 125 g pudding rice, a pinch of ground cardamom and 50 g caster sugar (to taste). Bring to the boil slowly, stirring continuously, then turn down to a gentle simmer and stir occasionally until the milk has reduced and the rice has thickened. (The length of time taken for this depends on the type of rice used, but generally, allow 20-30 minutes.) Add extra milk if you wish as the rice is cooking. Remove from the heat. When cool, fold in 100 g thick and creamy yoghurt. Blend a 400 g can of apricots in juice and divide the puree between 4 serving glasses. Spoon the rice pudding on top and serve.
