Cooking Instructions
Cook 200g amaranth in 500ml water for 35 minutes. Stir, remove from heat and leave to stand for 15 minutes with lid on.

Amaranth is one of the oldest cultivated plants and was part of the staple diet of the Aztec and Inca civilizations. Amaranth is gluten free and rich in minerals and protein. It is said to have more calcium and magnesium than cow's milk. It can be used in baking, cooking and sprouting and is recommended by Dr Gillian McKeith.

Amaranth is a tiny but rich, oily grain that cooks up in a scrumptious creamy texture. It is lovely cooked together with brown rice, sticks together very well and adds a lovely touch to any meal.
A good ingredient to have for rice ball variations, with toasted seeds and Umeboshi plum!
