Maple Syrup, Walnut & Buttermilk Wholemeal Scones Recipe
Ingredients:
300g self-raising flour
100g medium oatmeal, plus extra for dusting
100g wholemeal flour
50g caster sugar
2 tsp baking powder
½ tsp salt
160g unsalted butter, softened, plus extra for greasing
100g walnuts, roughly chopped
125ml buttermilk
150ml maple syrup
Method:
1. Preheat the oven to 200C/400F/Gas 4.
2. Mix the self-raising flour, oatmeal, wholemeal flour, caster sugar, baking powder and the salt in a bowl to combine.
3. Add the butter and rub into the flour mixture until it resembles breadcrumbs.
4. Fold in the walnuts.
5. Place the buttermilk and maple syrup into a separate bowl and mix well.
6. Add the buttermilk and maple syrup mixture to the dry mixture and mix well to make a dough.
7. Roll the dough out on a floured work surface to 3cm/1½in thick. Using a pastry cutter, cut out 12 scones (or as many as the dough will provide).
8. Place onto a greased baking tray and transfer to the oven to bake for 10-12 minutes, or until golden-brown.
9. Eat while still warm from the oven. (This is the best stage!!!)

Grease and line a 18 cm square tin with baking parchment. Put 100 g butter, 2 tbsp soft brown sugar and 5 tbsp maple syrup into a saucepan, place over a low heat and stir until melted. Remove from heat. Put 175 g oats, 2 tbsp dessicated coconut, 25 g apricots, 40 g sultanas and 25 g dried berries into a bowl and stir to combine. Pour in melted butter and sugar mix and mix well. Tip into the prepared tin and press down to flatten. Bake for 20-25 mins at 180 degrees C gas 5 or until just golden brown on top and firm to touch. Remove from the oven and leave to cool in the tin. Using a sharp knife, divide into 18 x 3 cm x 6 cm bars. Store in an airtight container for up to 4 days.

I was never a huge fan of maple syrup and just thought it was for pouring over waffles or pancakes, but it works really well in recipes and is much better for you than white sugar as it doesn't give you a sudden high then drop that sugar does. Great poured over hot desserts too.

This Christmas I discovered the joys of roasted sprouts with maple syrup! Wash, trim and half the sprouts, place on pyrex dish (maple sugar caramelises and is hard to remove from a baking tray) add salt/pepper. Cook at about 180 in oven for 20 mins, add 1 or 2 tablespoons of maple syrup, mix, pop in for about 15 more mins and yum! Just that little bit of maple syrup gives it a great taste and is not overpowering at all. People will ask what your secret is!

I've used maple syrup for many years and Meridian is my favourite! Lovely with a hot lemon drink(1 dessert spoon or to taste, juice of one whole lemon in large mug hot water) - great if you have a sore throat. Another favourite recipe - add 2 tablespoons maple syrup, two tablespoons extra virgin olive oil and a handful of fresh basil (or 2 teaspoons dried) to 250g sliced or diced carrots and bake in oven, stirring occasionally for an hour on gas 6/elec 200 - you'll never eat carrots any other way! A great milk shake (I use almond milk). One frozen banana, half pint milk & maple syrup to taste (I use 1 dessertspoon) - tastes like ice crime but VERY healthy!

This maple syrup has a wonderful taste. We love it on our breakfast porridge - much healthier than refined sweeteners! With lots of trace minerals you can be pleased your children like it!
