Butternut Squash ans Hazelnut Soup - Thu 14th Oct 2010
A lovely thick, golden and aromatic warming soup!
Sautée two finely chopped onions in a bit of oil.
Add a finely chopped butternut squash, and a bit of fresh grated ginger (how much depends of how spicy you like your food).
Cook over a low heat till the squash is soft, then add some boiling water and two generous tablespoons of Meridian Hazel Butter.
Gently simmer for 20 minutes, to let the flavours merge.
Blend and enjoy, this soup is delicious, and, like most soup, even better the next day.

This is one of my favourite nut butters, what a gorgeous taste!
I regret, though, that the recipe includes palm oil. I wonder if it is necessary, or if it couldn't be replaced with something more 'local', like sunflower for instance.

Completely delicious. But better for you than peanut butter. And intense, sweet, delicious hazelnut butter. Use it in organic, natural yoghurt, for instance, to make a delicious hazelnut yoghurt. Or in hazelnut milk, with a bit of natural sweetener for fantastic milk shake. On in baking nut butter cookies. If you want intense flavour, this one is the best. And if you like to keep your sugars, or carbohydrates low then this is indispensable in the kitchen for all sorts of baking and food preparation. HIGHLY recommended. (Note cashew butter very bland in comparison. And Almond butter also barely any taste.)
