What is malt extract? Meridian Malt Extract is made from selected barley grain. Starch in grains is nature's way of storing food for the new plant. When the seed is stimulated by moisture and warmth to start growing, naturally present enzymes convert the starch into sugars to be used by the germ as it grows into a young plant.
The malthouse simulates the Spring conditions of moisture and warmth and encourages the barley to sprout. After the germination process converts the starch into malt sugars, the process is halted by drying the grains in a kiln. This toasting stops growth and is responsible for the characteristic flavour of malt.
After toasting, the soluble components are concentrated to make malt extract, a thick syrup containing a complex mixture of carbohydrates, minerals and proteins, together with trace elements and vitamins.
Serving Suggestion
Extract of malt is delicious stirred into hot milk for a soothing evening beverage. Use barley malt extract in breadmaking to produce a well-risen, good flavoured loaf.

This is lovely and reminds me of my childhood when we were given Radio Malt after the War.

This is so difficult to buy in stores now. Even with Cod Liver Oil, but if you want it for cooking or just as a sweetener, it's almosty impossible to find. After the war we were given this at school and I always ran round to the back of the queue to get 'seconds' and the lady giving it out laughed and gave it to me anyway. My grandchildren love this too and While I always send some home they love to visit because they know I have plenty. A great buy and a great taste with the bonus of happy memories from my childhood.
