Sardine Pate - Tue 6th Sep 2011
Drain sardines and mash well. Add 2 tbsp fromage frais, 2 tsp hot horseradish sauce, 1 tsp finely grated lemon zest, 2 tsp finely chopped flat-leaf parsley and some ground black pepper. Mix well. Add an extra 1 tbsp fromage frais if you like. Serve as a pate or a dip. Try varying the seasonings to your taste.

Sardine Supper - Mon 25th Jul 2011
Drain the sardines and mash with a dash of Worcestershire sauce and a teaspoon of tomato ketchup. Pile onto some toast and grate over a sprinkling of mature Cheddar. Put under a hot grill until melted and serve piping.
