Salmon Fishcakes - Mon 5th Sep 2011
Parboil 800 g halved potatoes for 10 mins, drain and set aside. Wrap 250 g salmon fillets in foil and bake at 200 degrees C/gas mark 6 for 10 minutes. Flake salmon into a bowl and grate the cooked potatoes on top. Add some seasoning and herbs (optional), mix well and shape into 8 fishcakes. Coat first in 1 tbsp plain flour, then in a beaten egg and then in 100 g breadcrumbs. Place on a baking tray, brush with 2 tbsp olive oil and cook at at 200 degrees C/gas mark 6 for 25 minutes.

Parmesan Crumbed Chicken - Fri 3rd Feb 2012
Put 4 chicken breasts between pieces of clingfilm and beat with a rolling pin to about 1 cm thick. Mix together 3 tbsp grated Parmesan, 150 g wholemeal breadcrumbs and some chopped parsley on a plate. Season 75 g plain flour and put on another plate. Beat 2 eggs and put on a third plate. Dip the chicken first in the flour, then in the egg and then in the breadcrumbs. Heat 2 tbsp oil in a large frying pan and cook the chicken for about 3 - 4 mins on each side. Serve.
