Easy beef stir-fry
400g Beef Steak
2 tbsp sesame oil
2 cloves garlic, crushed
3 tsp fresh ginger grated
1 tbsp Soya Sauce
1 tbsp cornflour
1/4 tsp chilli powder
1 cup (250 ml) beef stock
1 bunch broccoolini, cut into 3cm lengths
2 cups (200g) snow peas trimmed
1 cup (50g) bean sprouts, rinsed
Slice beef into very thin slices. Combine oil, garlic and ginger into a bowl. Add beef strips, shake around to ensure they are well coated. Refrigerate for 2 to 3 hours.
In a small bowl combine soya sauce with cornflour and chilli powder to form a paste. Add beef stock slowly, stirring well until evenly blended. Heat extra oil in a wok over medium-high heat.
Add beef stock, cook for 2 minutes, or until lightly browned. Add vegetables and stir-fry for about 2 to 4 minutes or until tender. Add prepared sauce, heat through for 1 to 2 minutes or until thickened slightly and coating all meat and vegetables. Serve immediately over Eskal's steamed rice noodles.
Cooking Instructions
Place the noodles in boiling water or soup for 5 minutes.

Very good value, and lovely taste and texture. I would love to get them made with brown rice, though, for balance.
I used them in home-made spring rolls and it was a bit buly but worked fine and was pretty good.

Excellent value and very quick/easy to use. These noodles work very well in soup-based dishes and are very filling.

Soaking before use? - Mon 14th Nov 2011
Some recipes for Rice Noodles suggest soaking before boiling for a more even texture. I haven't found that step necessary.
