In reference to Raw Cane Sugar, the word Raw when related to sugar does not refer to the temperature at which the extraction has been carried out as in the definition of other RAW foods, but in the context of sugar the word Raw refers to a sort of lightly refined sugar and has been a word used to describe this type of sugar for many many years. In all cases, raw sugar is the product of the first stage of the cane sugar refining process, and as a result it has some very distinctive characteristics.
Other Information
The natural juice is pressed from sun-ripened sugarcane, then filtered and crystallised. No further refining is necessary to produce this free-flowing granulated sugar, suitable for all purposes.
This organic raw cane sugar is grown by farmers of the Asociacion Agricola Canera del Sur, Iturbe in Paraguay. The small-scale farmers of this democratic association also grow cotton and soybeans and tend livestock.

Fruity Cinnamon Toasts - Thu 9th Feb 2012
Peel, core and slice 500 g Bramley apples. Put in a saucepan with 6 tbsp water and 75 g granulated sugar. Bring to the boil and simmer gently for 10 mins. Meanwhile, place 250 g blackberries in a pan with 50 g granulated sugar. Bring to the boil and simmer for 1 min. Spread 25 g butter on both sides of 4 slices white bread (crusts removed) and grill on one side until golden. Turn over, sprinkle with 15 g caster sugar and 1/4 tsp ground cinnamon and grill until caramelised. Cut each slice into 4 triangles. Serve 2 scoops of ice cream on a serving plate and top with a portion of the apple and blackberries. Press 4 toasted triangles into the ice cream and serve immediately.
