Xanthum (also known as Xanthan) Gum, despite it's exotic name is a fairly down to earth polysaccharide which lends a diverse range of properties to 'free from' foods. Xanthan Gum is predominantly used in Gluten free baking to replace the elasticity which is lost from doughs in the absence of gluten. When used in fat free cooking, Xanthan Gum improves the thickness and creamy qualities of sauces and ice creams while keeping the fat content minimal.
Xanthan Gum is not just for those with specialist diets - adding just a sprinkle to smoothies or iced coffee makes for a rich and smooth texture. While a small pinch improves the stability of a vinaigrette salad dressing reducing the speed of separation between oil and vinegar.
A note of caution however! A little goes a long way. When it comes to using Xanthan Gum, be careful to closely follow the recipe and if in doubt use less rather then more.
Usage
Bread - 1 teaspoonful of Xanthum Gum per 4oz/100g flour
Cakes - ¼ teaspoonful of Xanthum Gum per 4oz/100g flour
Pizza bases - 2 teaspoons of Xanthum Gum per 4oz/100g flour

An exceptionally versatile gluten free and wheat free ingredient. Xanthan gum will improve all gluten free bread and cake recipes. Use in low fat baking and salad dressings as well.

Recipe
Gluten Free Bread:550ml Warm Water
2tsp Sugar
2tsp Quick Yeast
500g Rice Flour
2tsp Xanthan Gum
1tsp Salt
3tbsp Oil
- Mix in a bowl the warm water, sugar and quick yeast
- In another bowl mix the rice flour, xanthan gum and salt
- Beat in the yeast liquid and stir well
- Mix in the oil and pour it into an oiled 1kg/2lb bread tin
- Smooth the top and leave to rise for 90min
- Cover with tin foil
- Bake in pre heated oven 220°C/200°C/400°F/gas 7 for 50-60min.
Dairy Free White Sauce:50g Oil
1tsp Xanthan Gum
250ml Rice Milk
Pinch Salt
Pinch Pepper
- Heat oil in a saucepan, sieve in the xanthan gum and whisk well
- Cook gently over a gentle heat, whisking in the milk
- Continue whisking until sauce thickens
- Season with salt and pepper.

Essential in Gluten Free baking. Just an 1/8 tsp in 200g of gluten free flour helps the cake bind together and taste less dry.

Xanthan Gum is the magic ingredient that turns food that the lucky ones without intolerances wouldn’t eat, into food that is fit for all the family. When I received my first tub of gum (Thank-you Goodness Direct), I fell on it as the answer to all my baking frustration, and gaily sprinkled it into my cooking. A word of warning here, you really only need a little Xanthan Gum, the memory of my chocolate ice cream attempt that had the consistency of an industrial glue still comes at me in my dreams.
As with most cooking, you need to get to know your Xanthan Gum, and I’m still learning. Take what the tub says as a guide, but you might want more, you might want less, it will all depend on the end result to which you aspire. But do persevere, there will come that day when your child will turn to you with sparkling, excited eyes, and say, ‘Hey Mum, that’s lovely! Can I have some more!’
