Shish Kebabs - Mon 5th Sep 2011
Make a Middle-Eastern style marinade using 4 tbsp olive oil, 1 tbsp ground cumin, 1 tsp ground coriander, 1 finely chopped red chilli, 2 crushed cloves of garlic and the zest and juice of a lemon. Add cubes of chicken/halloumi/tofu/vegetables and leave to soak. Meanwhile make a salad of chopped/shredded white cabbage, red onion, cucumber and tomatoes. When ready, assemble the kebab ingredients onto skewers and grill. Stuff into warmed pitas with the salad. Serve with hummus, greek yoghurt, pickled chillies, fresh coriander and hot chilli sauce on the side.

Try blending cooked beans with garlic, cumin and fresh chilli to use as a pate, dip or sandwich filling.
